Hubby took a couple different recipes and combined to make his own version……and it is very tasty with lots of veggies in it. Enjoy!
No Bean Chili
Ingredients:
1 lb extra lean ground beef (bison or elk)
½ cup bell peppers chopped
1 cup chopped onion
1 cup chopped celery
4 cup chopped cabbage
3 large cloves garlic minced
1 cup water
16 oz tomatoes (ninja)
8 oz tomato sauce
4 teaspoons chili powder
½ teaspoon dried basil
¼ teaspoon sea salt
½ teaspoon black pepper
1 teaspoon oregano
¼ teaspoon cayenne pepper
Directions:
In pot brown ground beef, bell peppers, onion and garlic. Drain any excess fat or liquid after fully cooked. Turn to simmer and add tomatoes, tomato sauce, chili powder, basil, sea salt, black pepper and oregano. Let simmer for ½ hour with lid on (stirring occasionally). Mix in cabbage and celery then cover and cook until cabbage has softened to desired consistency (approximately ½ hour). Makes approximately 4 servings.
