  Prepping For The Week   It is amazing how we take getting a good night’s sleep naturally so easily for granted.  I am so glad this cold does know seem to be FINALLY officially on its way out…. See you, wouldn’t want to be you!!!   Now that I have been stuck in survival mode for pretty much the last 2 months it is time to get back on track starting with this weeks meal planning. Crockpot Pork Carnitas

Crockpot Pork Carnitas   Ingredients:   2.5 lbs of Pork Loin 1 bay leaf 1 1/2 C low-sodium vegetable broth like Trader Joe’s, or water [Dry Rub] 2 tbsp of chili powder 2 tsp of cumin 1 tsp of ground coriander 1/2 tsp cloves 1 tsp onion powder 1 tsp garlic powder 1 tsp sea salt 1 tsp oregano Directions: In a bowl combine all dry rub ingredients, mix well.  Rub pork loin with dry rub completely and place in crockpot.  Add remaining ingredients and cook on low for 6-8 hours. Unstuffed Cabbage Rolls

Unstuffed Cabbage Rolls   Ingredients 1  lb lean ground beef 1 large onion, chopped 1 small head of cabbage, chopped 1 tsp pepper 1/2 tsp sea salt 1 tsp oregano 1 (14.5 oz) can diced tomatoes, drained 1 (8 oz) can tomato sauce 2 cloves garlic, minced Shredded Monterrey Jack Cheese Instructions Brown ground beef with onions until the onions are translucent and ground beef is no longer pink.  Drain grease before adding cabbage, tomatoes, tomato sauce, and seasonings. Simmer until cabbage is tender. I served this over brown jasmine rice and then topped with the cheese.

Chocolate Peanut Butter Protein Bars

Chocolate Almond Butter Protein Bars

    Chocolate Almond Butter Protein Bars Ingredients 4 scoops Chocolate Shakeology 2 C. Oats ⅓ C. Chopped Peanuts or Walnuts 1 C. Almond Milk (unsweetened) ½ C Almond Butter Instructions Toss all ingredients in a bowl and combine until well blended. Press into an 8×8 pan. Place in fridge for at least 3 hours to chill. Cheesesteak Stuffed Peppers

  Cheese Steak Stuffed Peppers Ingredients 2 large green bell peppers 2 T olive oil 3 cloves garlic, minced 4 oz mushrooms, sliced 1/2 red bell pepper, diced 1/4 tsp black pepper 1/4 tsp sea salt 1 medium yellow onion, chopped 1lb flank steak or flat iron steak, thinly sliced 1 tsp Worcestershire sauce 4 slices Provolone cheese Instructions Preheat oven to 400 degrees Line small baking dish with tinfoil and spray with olive oil, set aside I sliced the green peppers in half, removed the seeds and trimmed the ribs. WW Pita Pizza

Whole Wheat Pita Pizza

This was a great healthy alternative to our usual pizza.  It was so delicious, even my 10 year old son LOVED it!  We will definitely be making this on a regular basis. Whole Wheat Pita Pizza 1 Whole Wheat Pita Bread 2Tbs Trader Joe’s Tomato Basil Marinara 1/3 c Mozzeaella Cheese, shredded Choice of Toppings  [remember lots of veggies]   Preheat oven to 400 degrees.  Place pita bread on cookie  sheet and bake 5 minutes.  Remove from oven,  spread marinara then add cheese on toppings of your choice.  Bake for an additional 6-8 minutes until cheese is melted. *pizza pictured[Continued…]

No Bean Chili

Hubby took a couple different recipes and combined to make his own version……and it is very tasty with lots of veggies in it.  Enjoy!
