Crockpot Pork Carnitas

Crockpot Pork Carnitas   Ingredients:   2.5 lbs of Pork Loin 1 bay leaf 1 1/2 C low-sodium vegetable broth like Trader Joe’s, or water [Dry Rub] 2 tbsp of chili powder 2 tsp of cumin 1 tsp of ground coriander 1/2 tsp cloves 1 tsp onion powder 1 tsp garlic powder 1 tsp sea salt 1 tsp oregano Directions: In a bowl combine all dry rub ingredients, mix well.  Rub pork loin with dry rub completely and place in crockpot.  Add remaining ingredients and cook on low for 6-8 hours. Unstuffed Cabbage Rolls

Unstuffed Cabbage Rolls   Ingredients 1  lb lean ground beef 1 large onion, chopped 1 small head of cabbage, chopped 1 tsp pepper 1/2 tsp sea salt 1 tsp oregano 1 (14.5 oz) can diced tomatoes, drained 1 (8 oz) can tomato sauce 2 cloves garlic, minced Shredded Monterrey Jack Cheese Instructions Brown ground beef with onions until the onions are translucent and ground beef is no longer pink.  Drain grease before adding cabbage, tomatoes, tomato sauce, and seasonings. Simmer until cabbage is tender. I served this over brown jasmine rice and then topped with the cheese.

    Chocolate Almond Butter Protein Bars Ingredients 4 scoops Chocolate Shakeology 2 C. Oats ⅓ C. Chopped Peanuts or Walnuts 1 C. Almond Milk (unsweetened) ½ C Almond Butter Instructions Toss all ingredients in a bowl and combine until well blended. Press into an 8×8 pan. Place in fridge for at least 3 hours to chill. This was a great healthy alternative to our usual pizza.  It was so delicious, even my 10 year old son LOVED it!  We will definitely be making this on a regular basis.
