Balsamic Grilled Zucchini

Balsamic Grilled Zucchini     This balsamic grilled zucchini recipe is super quick and easy.  It’s amazing how much flavor it adds in a short amount of time and makes a fabulous side dish for just about any meal. Ingredients: 4      (small) zucchinis, quartered lengthwise 2t     Olive Oil 1/2t  Garlic Powder 1/2t  Garlic, minced *optional 1t     Italian Seasoning 2T    Balsamic Vinegar   Directions: Mix all ingredients, minus the zucchini, in a large Ziploc bag.  Add zucchini to the bag and ensure it is well covered with the marinade.  Set aside and let marinade while your grill is preheating, up to 1 hour.  Grill[Continued…]

This or That

The struggle is real my friends….. I have been struggling with not drinking enough water and too much Coke zero. So I have decided that I have to have in at least 40oz of water before I can have any soda. I started this yesterday and it seems to be helping. I will drink this water and that will bring me up to 40oz and then will enjoy my soda. Light Terkiyaki Sauce, healthy eating, weight loss

Healthier Teriyaki Sauce

Healthier Teriyaki Sauce   1/4 c Bragg’s Liquid Aminos 2 Tbs Green Onion, sliced 1 Tbs Garlic, minced 2 pkg Stevia or similar 2 Tbs Agave 1 tsp Ginger, Ground 1 Tbs Sesame Oil   Combine all ingredients in small sauce pan.  Simmer to meld flavors, apx  minutes   I use this healthier teriyaki sauce to marinate diced chicken to put in my Stir-fry.  It always turns out tasty.  Don’t forget to serve over Coconut Rice!

  Fiesta Shrimp   Ingredients: 1 bag Frozen precooked shrimp (de-veined & shell removed) 2tsp Coconut Oil ½ tsp Chili Powder ½ tsp Paprika 3 cloves Garlic, minced ½ tsp Onion Powder 1 tsp Oregano ¾ tsp Sea Salt 2 T Cilantro, fresh (for serving) Directions: Mix dried ingredients in small bowl and set aside.
