Here is another kind of thrown together soup 🙂 I stayed home from work because I was not feeling too hot and soup was the only thing that remotely sounded good. Luckily I had some good stuff on hand to put this together in a pinch. This actually started off as a potato soup but kind of morphed into this, lol. I used Trader Joe’s Organic Vegetable broth for the base and it always looks so gross and does not smell any better. Needless to say I am always apprehensive to try anything that has it in it and this was no different. Funny thing is it is also always so tasty whatever it is in. You would think I would learn by now but apparently I am a slow learner. This turned out great as is but you could definitely change it up with what you have on hand.
Vegetable Soup with Kielbasa
Ingredients:
2T Melted Butter
Medium Onion, Diced
1/2 C Celery, Diced
1/2 C Carrots, Diced
1/4 C sweet Bell Pepper, Diced
1 1/2 C Kielbasa Sausage, Diced
48oz Broth, Vegetable or Chicken [I prefer the Trader Joe’s Organic Vegetable Broth]
2 C Hash browns, frozen [I used shredded]
2T Flour
1 C Cheddar Cheese, shredded
Directions:
Melt butter in large sauce pan. Add diced vegetables and sauté until onions are translucent. Add Kielbasa and broth reserving about 1/4c. Heat for about 5 minutes, then add frozen hash browns. When heated thoroughly, about 8 minutes, mix flour with reserved broth and add to soup. Once the soup has thickened up, add cheese. Serve when cheese has melted completely.
