Bacon Wrapped Seafood   This bacon wrapped seafood recipe is sure to be a grilling hit! Ingredients: 2T Lemon Juice 1/2t Cayenne Pepper 1/8t Garlic Powder 12 Jumbo Shrimp, uncooked, peeled and deveined 6 Large Sea Scallops, halved widthwise 12 Bacon Strips, halved (Turkey Bacon for us) 1 Lemon, medium cut into wedges 24 Toothpicks, or 4-6 skewers Directions: In large Ziplock bag combine all ingredients except bacon and lemon wedges. Beef Kabobs Beef Kabobs are always a summer time favorite 🙂  Make ahead and keep warm for large gatherings or have them build their own to put on the grill themselves. Balsamic Grilled Zucchini     This balsamic grilled zucchini recipe is super quick and easy.  It’s amazing how much flavor it adds in a short amount of time and makes a fabulous side dish for just about any meal. This or That

The struggle is real my friends….. I have been struggling with not drinking enough water and too much Coke zero. So I have decided that I have to have in at least 40oz of water before I can have any soda. I started this yesterday and it seems to be helping. I will drink this water and that will bring me up to 40oz and then will enjoy my soda. Light Terkiyaki Sauce, healthy eating, weight loss

Healthier Teriyaki Sauce

Healthier Teriyaki Sauce   1/4 c Bragg’s Liquid Aminos 2 Tbs Green Onion, sliced 1 Tbs Garlic, minced 2 pkg Stevia or similar 2 Tbs Agave 1 tsp Ginger, Ground 1 Tbs Sesame Oil   Combine all ingredients in small sauce pan.  Simmer to meld flavors, apx  minutes   I use this healthier teriyaki sauce to marinate diced chicken to put in my Stir-fry.  It always turns out tasty.  Don’t forget to serve over Coconut Rice!

Suck It Up and Do It My first reaction to this quote is “heck yeah, suck it up buttercup”.  The reality is that most of us know what to do, we just don’t know how to get from where we are now and to where we need, or want, to be.   Fiesta Shrimp   Ingredients: 1 bag Frozen precooked shrimp (de-veined & shell removed) 2tsp Coconut Oil ½ tsp Chili Powder ½ tsp Paprika 3 cloves Garlic, minced ½ tsp Onion Powder 1 tsp Oregano ¾ tsp Sea Salt 2 T Cilantro, fresh (for serving) Directions: Mix dried ingredients in small bowl and set aside.
