Cheese Steak Stuffed Peppers

Ingredients

2 large green bell peppers

2 T olive oil

3 cloves garlic, minced

4 oz mushrooms, sliced

1/2 red bell pepper, diced

1/4 tsp black pepper

1/4 tsp sea salt

1 medium yellow onion, chopped

1lb flank steak or flat iron steak, thinly sliced

1 tsp Worcestershire sauce

4 slices Provolone cheese

Instructions

Preheat oven to 400 degrees

Line small baking dish with tinfoil and spray with olive oil, set aside

I sliced the green peppers in half, removed the seeds and trimmed the ribs. I started my boiling water while dicing my veggies.

Boil green peppers for 3-5 minutes until tender. Remove and drain on paper towels.

I then Sauteed the garlic, onion, mushrooms, red bell pepper, sea salt and pepper until the onions were translucent (about 5 minutes).

Then I added my sliced steak and Worcestershire sauce and cooked until there was no pink (Cook meat to your preference).

I arranged the cut peppers on my prepared lined baking dish and filled with steak mixture and topped each with a slice of cheese.

Bake in oven for 10 minutes until cheese is golden brown.

*This was great with the steamed brown jasmine rice I made to go with it!
