Pollo Asado – Marinated Chicken
Ingredients:
4 Chicken Breast (I use thin sliced)
1/2 t Ground Black Pepper
1/4 c Pineapple Juice or any citrus juice
2 t Ground Cumin
2 t White Vinegar
1/4 c Olive Oil
1/2 c Onion, diced large
1 t Sea Salt
2 Garlic Cloves
1 t Dried Red Pepper Flakes
1 t Dried Cilantro
Directions:
Pour all ingredients except chicken in the blender.
Blend well.
Place chicken in Ziploc freezer bag.
Pour marinade over chicken.
Seal and place flat in the fridge for 2-14 hours.
Grill breast on Traegar or BBQ. (about 15-20 minutes depending on thickness)
I sliced the chicken after letting it set about 5 minutes for tacos. Will be multiplying the recipe in the future keeping some in the freezer ready to thaw and grill.
