Baked Chicken Parmesan


4-6         Chicken Breast, thin sliced [or 2-3 sliced in half to make 4-6 thin sliced]
1/2 c      Breadcrumbs
1/2 c      Almond Flour
1/4 c      Parmesan Cheese, grated
2 T         Butter, melted [or Olive Oil]
3/4 c      Mozzarella Cheese, grated
1 c         Marinara [I use Trader Joe’s]
Seasoning to taste, I typically use salt, pepper and garlic powder
Cooking Spray


Preheat oven to 450

Spray baking sheet lightly with cooking spray, set aside

In shallow bowl/dish combine breadcrumbs, almond flour, parmesan and seasonings.  Mix well.

Lightly brush chicken with melted butter then dredge through breadcrumb mixture individually.

Place on baking sheet.

Lightly spray the top of each breaded chicken breast before placing in oven to bake 20-22 minutes or until done.

Remove baking sheet from oven.  Add 1 T Marinara sauce and 1-2 T Mozzarella to the top of each chicken breast.

Bake until cheese is melted, approximately 5 minutes.

Serve over zoodles.
