Chicken Taco Stew

 

Crockpot Chicken Taco Stew

This recipe is so quick and easy to make.  It will surprise you with just how flavorful it is!

Ingredients

    1 onion, chopped
    1 16 oz. can black beans
    1 16 oz. can kidney beans

    1 16 oz. can corn (drained)
    1 8 oz. can tomato sauce
    1 packet taco seasoning
    3 10 oz cans diced tomatoes w/chilies
    1/4 t Cheyenne Pepper ***Optional***
    2 boneless skinless chicken breasts

Directions

Add everything except chicken to crockpot and mix well.

Place Chicken breast on top of mixture.   Cook on low for 6-8 hours or on high for 3-4 hours.  I use frozen chicken breast when cooking on low 8 hours.

Remove chicken, shred and return to crockpot.  Mix well and cook an additional 30 minutes.

 

NOTE: Leftovers freeze very well
