Crockpot Pork Carnitas

Crockpot Pork Carnitas

 

Ingredients:

 

2.5 lbs of Pork Loin

1 bay leaf

1 1/2 C low-sodium vegetable broth like Trader Joe’s, or water

[Dry Rub]

2 tbsp of chili powder

2 tsp of cumin

1 tsp of ground coriander

1/2 tsp cloves

1 tsp onion powder

1 tsp garlic powder

1 tsp sea salt

1 tsp oregano

Directions:

In a bowl combine all dry rub ingredients, mix well.  Rub pork loin with dry rub completely and place in crockpot.  Add remaining ingredients and cook on low for 6-8 hours.

Remove loin and shred.  Remove liquid from crockpot and set aside.  Add shredded meat back into the crockpot and mix with enough reserved liquid to make moist, discard any remaining liquid.

 

Notes:

We served ours on Corn tortillas with shredded cheese, sour cream and a little guacamole.  You could also add lettuce, beans, tomatoes and much more….

This dish was well received by the family.  However, in the future I will probably reserve about a 1/4 of the dry rub and add it to the meat after shredding for a little more flavor kick.
