Getting Dinner Ready

Already have my balsamic pork roast in the crockpot for dinner tonight.  I will be shredding it and serving over brown jasmine coconut rice.  It is so nice to have most of my dinner already done.  Such a lifesaver with busy evenings ahead!  What is your favorite go-to crockpot recipe?  Share in the comments below.

 

Crock Pot Balsamic Pork Roast

Ingredients:

  • 2 pound boneless pork shoulder roast (sirloin roast)
  • kosher salt, to taste
  • 1/2 tsp garlic powder
  • ½ teaspoon red pepper flakes
  • 1/3 cup chicken or vegetable broth
  • 1/3 cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey

Directions:

 

Rub pork with salt, garlic powder and red pepper flakes.

Place pork into the slow cooker.
In small bowl mix together the broth, vinegar and Worcestershire sauce.
Pour liquid over the pork.
Top with the honey.
Cook 6-8 hours on Low.
Use 2 forks to shred meet before serving.

Brown Jasmine Coconut Rice

Ingredients:

  • 2 Cups brown jasmine rice
  • 2 Cups water
  • 2 Cups coconut milk (1 can coconunt milk + a little water to make up the difference)

Put all the ingredients in your rice steamer just as you would for regular rice and enjoy 🙂
